Campfire stew is the perfect winter warmer.
Does anybody else love their slow cooker as much as I do this time of year. Nothing beats coming home on a cold wet night to a warm house and the smell of ready to serve dinner. It makes life so much easier.
I’d never thought of using a gammon joint to make a stew before but I will definitely be doing it again. The taste was amazing and it literally falls apart in your mouth. And better still it’s slimming world friendly, being totally Syn Free.
Here’s what you need to make your own –
– A joint of gammon (smoked or unsmoked dempending in your personal preference)
– 1 Tin of Baked Beans
– A handful of mushrooms
– 1 diced onion
– 3 diced carrots
– Dash of Worcestershire sauce
– 2tbsp of tomato purée
– 1tsp cumin
– pinch of chilli flakes
Put all of the ingredients into the slow cooker and cook for 6-8 minutes. Check the thickness of sauce after 6 hours. If still quite runny leave on high with the lid off to thicken.
The gammon should all fall apart. If it hasn’t use two forks to shred.
Itvreally is as simple as that. Once correctly cooled any left overs can be frozen.
